The globular, dark red roots with alternating rings of white and red inside make this Italian-named heirloom variety tender and delicious. They are wonderful eaten fresh, canned, or pickled. The reddish green leaves also make good tasting greens. Beets are easy to grow and tolerate a wide range of conditions, but prefer cool weather.
