Parsnips produce roots with a sweet, nutty flavor and crisp texture. Flavour is best if timed to mature during cool weather. Roots are yellowish white, shaped like a carrot, and may grow to 12" (30cm) long and 2" (5cm) across at the top. Use in stews and soups, steamed, sauteed in butter, or shredded raw in salads.
